Lemon-Blueberry Pound Cake

INGREDIENTS

FOR POUND CAKE
  • Cooking, for pan
  • 4 large eggs
  • 1 tsp. vanilla extract
  • 2 tablespoons plus 2 tbsp. All-purpose flour
  • 1 1/2 tsp. Baking powder
  • 1 tsp. kosher salt
  • 1 pt. Blueberries, a few reserved for topping

FOR GLAZE

2 tablespoons. Lemon juice

DIRECTIONS

  • Beat together sugar and butter till fluffy and light. Add lemon zest and vanilla extract and beat till blended.
  • In another medium bowl, whisk together 2 cups flour, salt, and baking powder. Add dry ingredients to wet ingredients until just blended, and stir. In a medium bowlcombine the majority of the blueberries with remaining 2 tbsp flour and toss to coat.
  • Make glaze: in a medium bowlwhisk together sugar and lemon juice. Pound cake over cooled and function.
