PALEO SWEET POTATO CARROT CAKE
Paleo carrot cake made out of potatoes rather than flour. 159 calorie free carrot cake that is gluten. Whipped frosting is made from potatoes!
INGREDIENTS
Cake
- 2 large eggs
- 1/3 cup honey
- 1/4 cup coconut milk
- 2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup raisins
Frosting
- 1/2 moderate white sweet potato peeled
- 3 tbsp butter or coconut oil to paleo
- 1/2 big lemon juice zest
- 1/2 tsp vanilla extract
- 1/8 tsp sea salt
INSTRUCTIONS
- In a food processor, mince potato till it reaches a nice consistency. Add rest of ingredients (except carrot and cauliflower ). Blend for approximately 1 minute. Stir in raisins and carrot.
- You may know it's finished cooking if a knife inserted into the middle of the cake comes out clean.
- Peel and cut sweet potato to the frosting. Steam until tender when poked with a fork.
- Add steamed sweet potato and remainder of ingredients to food processor and simmer for 3-5 minutes. Optional: Once pureed, press frosting to get rid of any lumps of lemon zest scents for a totally smooth outcome. Chill frosting in freezer at a metal bowl minutes until frosting consistency is reached by it and can be cooled down.
- Frost cake as desirable and top with chopped pecans (optional, but yummy ).
