CHOCOLATE MUG CAKE

Have you tried creating a microwave mug cake? I'm relatively new to the concept and I'm not going to lie: it's a tiny life. I happen to LOVE cake but MAN is creating a cake a little bit too much effort at times. Even a simple sheet cake feels daunting to me occasionally.

So to make my chocolate mug cake, then you start with mixing together all of the dry ingredients before adding all the wet ingredients. Inside of the mug. Once it mixed, simply pop up the mug in the microwave for 2 minutes, let it cool and ENJOY!

DESCRIPTION

This Chocolate Mug Cake is SO ridiculously simple to make and comes together (start to finish) in under 5 minutes! It's egg free, dairy free, and totally vegan.

INGREDIENTS

  • 1/4 cup of all purpose flour
  • 1/4 cup of sugar (you can use coconut oil or brown sugar if desired)
  • 1/8 tsp of salt
  • 1/8 teaspoon of baking soda
  • 2 tbsp of cocoa powder
  • 2 tbsp of mild tasting oil (I tested this with melted coconut oil in Addition to olive oil)
  • Splash of vanilla extract (about 1/4 teaspoon)
  • 1 heaping tablespoon of chocolate chips

INSTRUCTIONS

  • We are not likely to fill this to the top but as the cake batter will grow a whole lot, you need around an inch between the batter and the top of the mug. This will be different based on how wide your mug is go with something that may hold about 2 cups of liquid.
  • In your own mug, add the flour, salt, sugar, baking soda, and cocoa powder. Mix thoroughly so that it's completely mixed together.
  • Add in the oil, vanilla, and milk. Mix the batter until the flour is totally absorbed. Make sure to stir into the corners thoroughly as flour can get stuck there. Add in the chocolate chips and also give it a few more stirs.
  • I topped mine with a drizzle of peanut butter and some chocolate chips.
