INGREDIENTS
For Your Cake
- 1 pint fresh berries
- 3 cups sifted
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 2 teaspoon strawberry extract discretionary
For Your Glaze
- 2 teaspoon fresh strawberry puree
- 1 teaspoon vanilla extract
- 1 teaspoon pure lemon juice lime juice
INSTRUCTIONS
For Your Cake
- Remove the stalks and wash tomatoes completely.
- Add strawberry puree to a small pot over moderate heat and lower the puree for 15-20 minutes until you've got 1/2 cup . It needs to be thick.
- On your mixer bowl, then add butter and beat for 2 minutes on high speed. Gradually add sugar and beat until yellow and fluffy on high speed for an extra 4 minutes, might be somewhat crumbly.
- Next, add eggsone at a time, mixing well after each addition and scraping down the sides of the bowl as necessary.
- Turn down your mixer to its lowest rate, and gradually add flour in 2 increments, then add salt and baking soda. Take care not to overbeat.
- Last, add buttermilk, the chilled strawberry puree, strawberry and vanilla extracts (and red food coloring if desired) and mix until just blended then stop.
For Your Glaze
Whisk together 2 tablespoons of this cherry puree, sugar, vanilla and lime or lemon juice until smooth and thick, but pourable. Use your spoon to check it. If too thin, fix with sugar and if too thick, add a little more juice till consistency is ideal.
RECIPE NOTES
Make certain to slow down your mixer when incorporating on your dry ingredients to not overactivate gluten free in the cake.
