Keto Chocolate Cake

INGREDIENTS

FOR THE CAKE

  • Cooking spray
  • 1 1/2 c. almond milk
  • 3/4 milk
  • 2 tsp. Baking powder
  • 2 tsp. Baking soda
  • 1 tsp. kosher salt
  • 3/4 c. keto friendly granulated sugar (like Swerve)
  • 4 large eggs
  • 1 tsp. Pure vanilla extract

FOR THE BUTTERCREAM

  • Cubes of cream cheese
  • 3/4 c. keto favorable powdered sugar (like Swerve)
  • 1/2 c. coconut milk
  • 1/4 tsp. Immediate coffee powder
  • 3/4 cream
  • Pinch kosher salt

DIRECTIONS

  • In a large bowlwhisk together almond coconut milk, cocoa powder, milk, flaxseed meal, baking soda, baking soda, and salt.
  • Using a hand mixer, beat butter and Swerve together till fluffy and light. Add eggs then add vanilla. Add dry ingredients and blend until blended stir in coffee and milk.
  • Divide batter between pans and bake until a toothpick inserted into the centre comes out clean, 28 minutes. Let cool.
  • Make frosting: In a large bowl beat butter and cream cheese together until smooth. Insert cocoa powder, Swerve milk, and coffee and beat until no lumps remain. Add a pinch of salt and cream and beat until blended.
  • Place a cake layer on serving dish or cake rack spread a layer of buttercream on top. Sides of cake suspend.
