Keto Chocolate Cake

INGREDIENTS
FOR THE CAKE
- Cooking spray
- 1 1/2 c. almond milk
- 3/4 milk
- 2 tsp. Baking powder
- 2 tsp. Baking soda
- 1 tsp. kosher salt
- 3/4 c. keto friendly granulated sugar (like Swerve)
- 4 large eggs
- 1 tsp. Pure vanilla extract
FOR THE BUTTERCREAM
- Cubes of cream cheese
- 3/4 c. keto favorable powdered sugar (like Swerve)
- 1/2 c. coconut milk
- 1/4 tsp. Immediate coffee powder
- 3/4 cream
- Pinch kosher salt
DIRECTIONS
- In a large bowlwhisk together almond coconut milk, cocoa powder, milk, flaxseed meal, baking soda, baking soda, and salt.
- Using a hand mixer, beat butter and Swerve together till fluffy and light. Add eggs then add vanilla. Add dry ingredients and blend until blended stir in coffee and milk.
- Divide batter between pans and bake until a toothpick inserted into the centre comes out clean, 28 minutes. Let cool.
- Make frosting: In a large bowl beat butter and cream cheese together until smooth. Insert cocoa powder, Swerve milk, and coffee and beat until no lumps remain. Add a pinch of salt and cream and beat until blended.
- Place a cake layer on serving dish or cake rack spread a layer of buttercream on top. Sides of cake suspend.
