INCREDIBLE BLUEBERRY BUTTERMILK BREAKFAST CAKE

Ingredients
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups bread split
- 1 tsp salt
- 2 tsp baking powder
- 1/2 cup buttermilk
- 1 tbsp coarse sugar for topping
Directions
- Grease a 9 or 8 inch pan and put aside. Add vanilla and the egg and beat till blended.
- In a mixing bowl, whisk together the 1 plus 3/4 cup flour, baking powder and salt. Toss the blueberries at the 1/4 cup bread that is rest.
- Add the flour mixture to the creamed mixture a bit at a time alternating with the buttermilk.
- Spread the batter into the prepared pan. Sprinkle with sugar. Bake for 35-40 minutes until it's cooked through and toothpick is clean. Prior to serving, let cook for 15 minutes.
