Strawberry Coffee Cake


I've made Strawberry Cheesecake Coffee Cake. Plus it was cake using seven layers --vanilla cake cheesecake layer yet another cake layer topped with berries, crumb topping and candy vanilla glaze.




And this time I used sauce rather tomatoes and produced topping and cake. I want to keep it simple and simple. A coffee cake is wrapped together by making a mix then mixing in cream, egg and vanilla.

In fact, each and every layer of the cake has been amazing! In the cake coating, to the cream cheese layer, to the coating then streusel on top! And how can you not enjoy this cake!? I adored everything about it and it turned into my favorite. I will make it again!

Strawberry Coffee Cake

Description

Strawberry Coffee Cake is cake that is moist and buttery with strawberry and coriander filling and crunchy streusel topping. It feel and taste combo!!

Ingredients

  • 2 1/4 cups flour
  • 3/4 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4tsp salt
  • 1 egg
  • 1 tsp vanilla
  • 8 ounces.
  • 1/4 cup sugar
  • 1 egg
  • 3 tsp lemon juice
  • 1/2 tsp vanilla

Strawberry Sauce:

  • 6 Tablespoons sugar
  • 2 tsp lemon juice
  • 1/2 tsp vanilla

Directions

Strawberry Sauce:

  • First make sauce. In a sauce pan mix sugar, tomatoes and lemon juice. Stir and cook on moderate heat until berries release sugar melts and their sugars.
  • Combine cornstarch and water to create a slurry and add it to the berries. Continue to cook for a couple of minutes till it thickens, then put aside to cool.

Cake:

  • Add chunks of butter and cut it until crumbly. It is possible to use 2 forks or a pastry cutter to produce the crumbs. Eliminate 3/4 cup of the mixture and put you may use it for topping.
  • Add baking powder baking soda and salt to the crumb mixture and stir with a fork.
  • Blend in sour cream, egg and vanilla. The mixture will be sticky and thick.

Filling:

  • Beat softened cream cheese until creamy and smooth, then add sugar, vanilla and lemon juice and blend well. Add egg and blend. Spoon on the bottom layer, but do not go around to the borders will burn off during baking.
  • Then, top with skillet (do not go around to the borders ).
  • Bake 45-55 minutes or till a toothpick inserted into the centre comes out clean.
  • Cool for half an hour in the pan, then remove and cool.
