INGREDIENTS

  • 2 3/4 cups sugar

  • Tbsp vanilla extract

  • 6 maraschino cherries

For your Rum Syrup

  • 1/2 cup rum
  • 2 tablespoons grated butter melted
  • 2 tablespoons pineapple juice
  • 1 teaspoon pure vanilla extract

INSTRUCTIONS

  • Begin by preheating oven to 350 degrees and spraying on a 12 cup bundt pan with non stick spray or grease pan (be sure to prepare your pan well to assure no sticking to this particular cake ).
  • Beat the butter for 2 minutes on high speed.
  • Add the sugar. Mix together to get an extra five minutes, until light.
  • Switch your mixer to the rate and gradually add the flour in 2 tbsp. Add salt. Take care not to overbeat. Add crushed pineapple, the sour cream and vanilla extract. Take care not to overmix.

To build with top of cake

  • To assemble cake melted butter at the bottom of the pan scatter the butter with sugar.
  • Line the bottom of the pan and include 1 cherry to the middle of each pineapple ring.
  • Evenly pour cake batter over inhale and pineapples or till toothpick inserted into center of cake comes out clean but still moist.

For your Rum Syrup

  • In a pot combine all of the ingredients and then cook over heat.
