INGREDIENTS

CRUST

1/2 cup uncooked unsweetened coconut flakes

CHOCOLATE MOUSSE

  • 1 cup total fat coconut milk
  • 1 tbsp instant coffee powder
  • 2 tsp vanilla extract
  • 8 oz chocolate
  • 2 tbsp almond butter or peanut butter

INSTRUCTIONS

  • Set the cashews and cover with water. Drain well.
  •  Make the crust. Also the mixture along with ground creates a ball, about 2-3 minutes.
  •  Add maple syrup, coconut milk, cocoa powder, instant coffee, vanilla, and the cashews to large powered blender or a food processor. Pulse until creamy and smooth, scraping down the sides as necessary, about 5 minutes. Taste, adding maple syrup when necessary to sweeten. Pour over the crust. Transfer to the refrigerator and chill for at least 2 hoursor overnight.If you mouse remains pudding like, move to the freeze and freeze till firm.
  •  In a microwave safe bowl, melt together the butter to 1 minute. Return to the refrigerator to install, approximately 10 minutes or until ready to serve.
