Hile I have tried numerous chocolate cakes through time, and neglected after a lot of distinct recipes, so it was time to take things into my own hands and produce the very best chocolate cake we have ever had. That is a call to create, I understand. Consequently...this one takes the cake.

The Most Beautiful Fudgy Chocolate Cake

Ingredients

  • 1 1/2 cups (7 ounces / 200 g) plain or homogenous yoghurt
  • 1 1/2 cups (11 oz / 310 g) white granulated sugar (or some natural granulated baking sweetener measuring 1:1 with glucose )
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp (20 ml) pure vanilla extract
  • 3/4 cup (190 ml) boiling water mixed with 2 tsp instant coffee powder
  • 8 oz (250 g ) semi sweet or dark chocolate chips

Directions

  • Stick cooking oil.
  • Whisk to blend.
  • Add egg, oil, vanilla and milk to the flour mixture and beat well to mix. Pour in the boiling water (using all the coffee), and blend until shiny.
  • Bake for approximately 40 - 45 minutes, until a toothpick inserted in the middle of the chocolate cake comes out semi-clean with little quantity of cake (not runny batter) onto it thanks to this fudgy texture.
  • Transfer cake in the pan to a wire rack and cool thoroughly before frosting.
  • See it does not simmer or boil. When the cream is warm, turn stove off and then take the saucepan off the heat.
  • Insert in the chocolate chips; pay saucepan with a lid and let sit for a good five minutes to soften and melt the chocolate.
  • Uncover, and stir gradually first, using a spatula or wooden spoon, slowly mixing quicker until ganache is smooth, glossy and creamy. Refrigerate for one hour or hour and a half till thick enough to disperse (similar consistency to Nutella).

Notes
