INGREDIENTS

INSTRUCTIONS

  1. Grease and line two 8-inch round cake tins with parchment or baking paper.
  2. In a medium saucepan, add white chocolate butter, sugar and milk. Put on medium heat, stirring till smooth and sugar has dissolved. Put aside for a couple of minutes to cool.
  3. Add vanilla and eggs to cooled chocolate mixture and stir till blended. Add baking powder and flour and stir till combined -- do not worry if the batter is a bit lumpy. Gently fold throughout the raspberries.
  4. Split the cake batter between the two cake tins and set in the oven for about 30-35 minutes until a skewer comes out clean. Transfer to a wire rack to cool.
  5. To make the buttercream, add butter. Beat till fluffy and light. Insert one tbsp of milk 1/3 icing sugar and beat until creamy and smooth. Insert one tbsp of milk 1/3 icing sugar and beat again. Put in the icing sugar and beat until smooth. Insert jam and beat until creamy and smooth.
  6. Place a cake layer or endure. Cover the top with buttercream. Place second cake layer on top (upside down to get a great flat surface ). Frost the sides and top of cake. Top with raspberries.
