Ingredients

  1. 3 large eggs
  2. 2 cups sugar
  3. 1 tsp vanilla extract

Cinnamon

  1. 1/2 tsp nutmeg
  2. 1 tsp baking soda
  3. 1/2 tsp salt
  4. 4 cups peeled and chopped tart apples, I use Granny Smith

Frosting

  1. 2 tbsp butter
  2. 1 tsp vanilla extract
  3. 1 tbsp half-and-half or milk

Directions

  1. In a large bowl, whisk together eggs, sugar, oil, and vanilla extract until blended.
  2. In another bowl, whisk flour, cinnamon, nutmeg, baking soda and salt together.
  3. Add dry ingredients and stir to blend.
  4. Fold in pecans and apples.
  5. Bake 50 to 55 minutes or till a toothpick inserted into the centre comes out clean.
  6. Let cool.
  7. Make frosting. Put butter and cream cheese in a bowl. Beat till smooth with electric mixer.
  8. Add half-and-half vanilla extract, and confectioners' sugar and beat until smooth.
