Ingredients
- 3 large eggs
- 2 cups sugar
- 1 tsp vanilla extract
Cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
- 4 cups peeled and chopped tart apples, I use Granny Smith
Frosting
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 tbsp half-and-half or milk
Directions
- In a large bowl, whisk together eggs, sugar, oil, and vanilla extract until blended.
- In another bowl, whisk flour, cinnamon, nutmeg, baking soda and salt together.
- Add dry ingredients and stir to blend.
- Fold in pecans and apples.
- Bake 50 to 55 minutes or till a toothpick inserted into the centre comes out clean.
- Let cool.
- Make frosting. Put butter and cream cheese in a bowl. Beat till smooth with electric mixer.
- Add half-and-half vanilla extract, and confectioners' sugar and beat until smooth.
