BLUEBERRY BANANA CAKE WITH CREAM CHEESE FROSTING
I believe myself to be a shopper in regards to anything to get the photo/cake or house props. I believe I paid full cost to get a cake rack, and it is one that I have used a twice
I do do almost all of my shopping in discount shops or thrift stores . Every once in a while I get suckered in at an antique store and that is precisely what happened on this cake rack.
I needed to try out something, although the companion to blueberry appears to be lemon. Seeing as how banana appears to be among my smoothie combosI figured I would give it a shot in cake form to find out whether it works. Ridiculously really.
Blueberry Banana Cake
The blend of blueberries and bananas has paired with a cream cheese.

INGREDIENTS
- 1/4 tsp salt
- 2 eggs room temperature
- 1 teaspoon vanilla
- 3/4 cup overripe bananas mashed,
- 1 cup blueberries fresh or frozen, pitched in two tsp cake flour
- 6 ounces cream cheese space temperature, fat
- 3 cups powdered sugar
- 1 teaspoon vanilla
INSTRUCTIONS
- Preheat oven to 350F. Grease and flour three 6" cake rounds, line with parchment.
- In a medium bowl, whisk baking powder, cake flour, and salt. Put aside.
- Beat till smooth. Add sugar and conquer med-high until light and fluffy (2-3mins).
- Reduce speed and add eggs one at a time. Add bananas and blend until combined.
- Alternate adding flour mixture and buttermilk, starting and ending with flour (3 additions of bread and two of milk). Fully incorporating after every addition. Don't overmix.
- Gradually fold in blueberries, being careful to not break them.
- Spread batter evenly into prepared pans and bake for 30mins or until a toothpick comes out clean.
- Place cakes on wire rack to cool for 10mins then turn out on wire rack to cool.
Cream Cheese Frosting:
Beat butter and cream cheese till fluffy (2 mins). Add powdered sugar 1 cup at a time. Add vanilla and beat until tender (3 mins).
Meeting:
- Put a layer of serving plate or cake onto a cake rack. Top of frosting with 2/3 cup. Repeat with remaining layers and then apply a thin coating of frosting all around the cake. Chill for 20mins.
- Use the frosting to frost the cake, and then also do a swirl onto the sides if wanted and top with an offset spatula.
- If desired, top with blueberries and thyme sprigs.
