Homemade Granny Cake
We love each one the cakes our grandma made for usbut when we needed to (haaaad into ) choose favorites, this particular one, fondly known just as"Granny Cake," are our best option. It turns out perfectly (it is neverdry) and contains lots of fantastic taste and texture which keeps it interesting and keeps everybody else coming back for more. This cake type of features a coffee-cake-look about it, but it is much more than this, trust us....
This cake is anything but, although the title might seem easy. You are likely to be equally as obsessed with it as if we had been (and continue to be), and quite soon it's going be a convention in your family also!
INGREDIENTS
- 1 1/2 cups sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- Can pineapples, with juice
- 1 cup evaporated milk
- 1/2 cup sugar
- 1/2 cup (1 stick) unsalted butter
- 1 tsp vanilla
PREPARATION
- Preheat oven to F and grease a baking dish with butter or skillet.
- In a large bowlwhisk together sugar, flour, baking soda and salt, then mix in pineapple and eggs.
- Pour batter with an even coating of brown sugar and pecans.
- Place dish in oven and bake for 40-45 minutes, or until toothpick inserted into centre comes out clean.
- While cake cooks, combine evaporated milk, sugar and butter and bring to a boil.
- Remove from heat and stir in vanilla extract, then pour over cake.
- Let cake cool so that it absorbs icing serve slice and revel in.
