Ding Dong Cake

Growing up my mother could buy Hostess snacks and us Little Debbie snacks for our lunch boxes. We never understood what she'd come home with, every time a box of Ding Dongs were at the cupboard, but I got a bit giddy. Inform me recall these treats? They tasted like HoHo's however another form.

ingredients

  1. 2 large eggs
  2. 1 teaspoon baking soda
  3. 1/2 cup strong brewed coffee, chilled
  4. 1/2 cup milk
  5. 5 Tbsp flour
  6. 1 cup milk
  7. 1 teaspoon vanilla extract
  8. 1 1/4 cup heavy whipping cream

Directions

FOR THE CAKE:

  1. Two 9-inch cake pans with baking soda. Put aside. Preheat oven to 350°F.
  2. In a bowlcombine the flour, cocoa, salt, baking soda and baking powder. Put aside.
  3. In a measuring cup, coffee chilled . Put aside.
  4. Beat sugar and butter for 5 minutes using a mixer. Beat in eggs, one at a time. Gradually add dry ingredients and alternative with the coffee/milk mix (about 3 enhancements of each).
  5. After all of the components have been added, beat cake mix for around 2-3 minutes until tender (scraping down the sides of the bowl as required ).
  6. Divide cake batter. Bake in oven for 25 minutes. Remove and let cool about 10 minutes . Invert onto a wire rack and cool completely.

  3. In a mixing bowl, combine sugar and butter, beat until fluffy and light (approximately 4 minutes). Gradually add beating until blended. It might curdle slightly keep beating until it turns into the texture of lotion!

FOR THE GANACHE:

Using cream ( safe for the microwave ) combine sweet chocolate in a glass jar. Heat for 1 minute. Remove from microwave and stir until smooth (you might want to heat for an additional 15-30 minutes ). Do not over heating. As you start to construct the cake, set aside.

TO ASSEMBLE:

  1. Place layer of cake onto a cake plate. Top it. Add the next layer of cake on top.
  2. Pour the ganache with an offset spatula to help protect sides and the top. Let me set, about 15 minutes. Slice and Revel in!

Notes

*The java in the cake doesn't give a java taste to it, it boosts the chocolate taste. If you want, you can substitute the 1/2 cup of java with an Extra 1/2 cup of milk instead (making the Entire quantity 1 cup of milk)
