Ingredients
- 1 1/2 cups (7 ounces / 200 g) plain or homogenous yoghurt
- 1 1/2 cups (11 oz / 310 g) white granulated sugar (or some natural granulated baking sweetener measuring 1:1 with glucose )
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 1 tbsp (20 ml) pure vanilla extract
- 3/4 cup (190 ml) boiling water mixed with two tsp instant coffee powder
- 8 oz (250 g ) semi sweet or dark chocolate chips
Directions
- Stick cooking oil spraying.
- Whisk to blend.
- Add oil, egg, vanilla and milk and beat to mix. Pour in the boiling water (using all the coffee), and blend until shiny.
- Pour into the prepared pan. Bake for approximately 40 - 45 minutes, until a toothpick inserted in the middle of the chocolate cake comes out semi-clean with little quantity of cake (not runny batter) onto it as a result of fudgy texture.
- Remove from oven and let it cool for 20 minutes. Transfer cake in the pan to a wire rack and cool thoroughly before frosting.
- Pour into a saucepan and heat over low heat for a couple of minutes. See it does not boil or simmer it. When the cream is warm, turn off stove and then take the saucepan off the heat.
- Add the chocolate chips; pay saucepan and let sit to soften and melt the chocolate.
- Uncover, and stir gradually using wooden spoon or a spatula, until ganache is creamy, smooth and glossy slowly mixing. Refrigerate for one hour or hour and a half till thick enough to disperse (similar consistency to Nutella).
- Spread over the cake.
- For a more fluffy cake, then use 2 tsp baking powder. To get a fudgier cake, then use 1 1/4 tsp.
- Greatest Fudgy Chocolate Cake was accommodated by THIS RECIPE'S chocolate cake part, substituting butter out for oil to get texture.
