Ingredients

  1. 1 tbsp butter (softened)
  2. 2 tsp lemon zest
  3. 1 cup milk

Directions

  1. In a large bowl cream the butter and half of the sugar (1/3 cup), add the zest and egg yolk beat to blend. Stir in (using a wooden spoon) the flour alternately with the milk. Stir in the lemon juice. Combine well.
  2. In a bowl beat the egg whites and staying 1/3 cup sugar until stiff, then fold into the batter. Place the cake pan in a larger high skillet full of 1 1/2 inches (4 cm) of warm water. Bake for about 25-30 minutes or till golden.
  3. Let cool to heat, dust with powdered sugar and serve. Enjoy!
