Ingredients
- 1 package (8 oz ) cream cheese, softened
- 2 cups sugar
- 6 large eggs
- 2 tbsp orange juice
Zest from a orange that is little
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 can (14 oz ) whole-berry cranberry sauce
- For Your Glaze
- 2 tbsp orange juice
- 1/4 tsp orange zest
Instructions
- Add the eggs one at a time. Beat in the orange juice and the majority of the zest (booking a 1/4 tsp for your glaze.)
- In another bowl, whisk the flour, baking powder, baking soda, and salt together add to the creamed mixture, beating until just blended.
- Spoon half the batter to the prepared pan, smoothing the top out . Dollop the cranberry mixture and spread evenly.
- Loosen the sides using a knife that is soft in the pan. Cool in pan for 20 minutes and then invert on a serving plate. Let cool.
- To make the glaze, whisk together orange juice, the sugar and simmer in a bowl until smooth, adding more sugar or juice.
- Slice and Revel in!
- When incorporating the cranberry sauce do your best not to disperse it - this can help avoid the cake from sticking to the pan.
