Lemon Crumble Breakfast Cake

An easy to make breakfast or coffee cake that's tender and moist and topped with a crumble topping dusted with powdered sugar. An excellent addition to your weekend brunch that is sunny!

Ingredients

For Your Crumble Topping:

  1. 4 tbsp butter
  2. 3/4 cup unbleached
  3. 1 tbsp fresh lemon juice

For Your Lemon Cake:

  1. All-purpose flour, 2 cups unbleached
  2. 1/2 tsp salt
  3. 2 tsp baking powder
  4. Sugar granulated
  5. 2 eggs
  6. 1 1/2 tsp vanilla bean paste
  7. 1/2 cup buttermilk, well shaken (entire fat or whole milk blended with 1 1/2 tsp vinegar)

Directions

For Your Crumble Topping:

  1. Add sugar, the flour, lemon juice and simmer. Mix with a fork. Put aside.
  2. Invert the base of an 8" springform pan (to make it easier to slip the cake off the ground ) then lock the faces of the pan.
  3. Mix the flour, baking powder and salt. Put aside.
  4. Beat until fluffy and light. Scrape down the sides of the bowl.
  5. Together with the juice, combine the buttermilk in a measuring cup with a spout. Insert 1/3 of this flour mixture. Beat. Insert 1/3 of the buttermilk mixture and mix until smooth. Repeat until both are integrated, incorporating 1/3 of the bread of the buttermilk.
  6. Pour into the prepared pan and spread evenly. Stir together with the crumble topping (leaving a few in massive clumps) and bake in the preheated oven for 40 minutes until the surface is lightly browned and a toothpick inserted into the center comes out nearly clean.
  7. When serving hot, cool the cake, or cool thoroughly before removing the sides. Before serving, slide the cake. To get a simple glaze mix cup powdered sugar with lemon juice to get a consistency.   8. Some of our subscribers said the cake has been dry on moist and the outside . Please bake at a pan and then adjust the time as recorded below, if you are worried.
  9. When using a 9" pan, then make sure you adjust the baking time. Check to make sure it will not over-bake.
