Ingredients
! For the cake:
- 2 cup flour
- Sugar granulated
- 1/4 tsp salt
- 3/4 cup unsweetened coconut
- 1 cup buttermilk
- 2 eggs
- 1/2 tsp vanilla or coconut extract
- ! For your frosting:
- crushed pineapple
- 1 box 3.9 ounce. Box vanilla pudding mix
- Toasted coconut for optional
Directions
To create the cake:
- In a large mixing bowl, whisk together dry ingredients (flour, sugar, baking soda, baking soda, salt and coconut). In another bowl or measuring cup, combine together buttermilk, oil, eggs and extract.
- The batter ought to be thick and smooth.
- Set the batter.
- Bake 28 - 32 minutes, until the top is golden brown and the toothpick inserted in the cake's middle comes out clean.
- Drain pineapple out of juice, reserving the juice. Squeeze as much liquid as you can.
- In a large bowlwhisk pudding mixture and pineapple juice together. Add pineapple and stir. Add whipped topping and fold gently.
- Spread frosting over cooled cake.
- Chill cake until ready to serve.
