CANNOLI CAKE RECIPE

DIRECTIONS

INSTRUCTIONS FOR THE CAKE
  1. Preheat the oven to 350 degrees, grease and flour three inch round pans.
  2. For 30 minutes whisk the flour, baking powder, baking soda and salt in a medium bowl. Set aside
  3. In a different bowl, then add the buttermilk, oil, and vanilla. Put aside.
  4. From the bowl of the mixer, then add the butter and blend at medium speed. Add the sugar and continue to blend on medium speed for 3 to 5 minutes until lightened in color and fluffy. Add the eggs one at a time until the yellow of the yolk disappears blending.
  5. Alternately add the flour mixture and buttermilk mixture, beginning and ending with the dry ingredients (3 additions of dry ingredients and two of liquid).
  6. Don't blend above moderate speed or above blend the cake batter.
  7. Bake in 350 degrees for 20-25 minutes or till a toothpick inserted into the centre comes out clean or with only crumbs. Let cool 10 minutes and flip out.

FOR THE MASCARPONE FILLING

With a spatula or spoon mixture by hand the sugar and vanilla and cinnamon. Fold in the chocolate chips. Refrigerate till ready to use.

FOR THE CINNAMON WHIPPED CREAM

ASSEMBLY
