Each year my backyard is meticulously planned by me with a single purpose in mind ! Veggies and fruits from your garden always taste a lot better, although I really don't understand why. Additionally, my kiddos will select and eat from the garden better than anything that I put in their plate.

I can not allow a summer move by with indulging that tastes that are just indulgent or appreciating these Baked Zucchini Fries. Ingredients

  1. 6 tablespoons extra virgin olive oil
  2. 2 tablespoons lemon juice
  3. 1 teaspoon almond or vanilla extract
  4. AP flour after instructions can be substituted by 2 cups bread here
  5. 2 tablespoons lemon zest

Glaze

1-2 tablespoon lemon juice

Directions

  1. Spray a loaf pan with parchment paper. Put aside.
  2. Put aside.
  3. In a big bowlcombine the sugar and olive oil. Whisk to blend.
  4. Almondmilk and whisk and add eggs .
  5. Add vanilla and lemon juice extract and stir to blend.
  6. Add flour mixture and stir until incorporated.
  7. Fold in lemon zest and zucchini.
  8. Pour batter into the prepared pan and bake for 45 to 55 minutes until an inserted toothpick comes out with moist crumbs. The surface of the cake should appear dry.
  9. Set the loaf onto a rack and cool for 15 minutes. Utilize the paper. Let cool on rack.

Glaze

Drizzle the glaze over the cake.
Slice and serve.
