BUTTERMILK CAKE
- 1/2 cup (1 stick or 113g) butter, room temperature
- 2 cups (400g) light brown sugar
- 2 large eggs, room temperature
- 2 cups (480g) buttermilk
- 2 tsp vanilla extract
- 3 cups (375g) all-purpose flour
- 2 tsp baking soda
- 1 tsp salt
- PECAN GLAZE
- 6 tbsp butter, melted
- 1 cup (200g) light brown sugar
- 1/4 cup (61g) buttermilk
- 1/8 tsp salt
- 1 cup pecans about sliced
Directions
BUTTERMILK CAKE
Prepare a baking dish. (I used GOOP, click on the recipe at the Notes)
- In a large bowlbeat the butter and brown sugar together using a hand-held mixer till smooth.
- Add the eggs one at a time, integrating them into the butter mix fully. If necessary scrape the sides of the bowl. Mix until blended. (Be sure that there are no lumps)
- Add the flour, baking soda, and salt to the wet ingredients. Stir by hand using a spatula until ingredients are incorporated.
- Bake the cake for Half an Hour. You should have the ability to pour the glaze.
- If you choose the cake from the oven, then immediately pour the pecan glaze all around the cake. Return it to the oven for 10 minutes.
