Creamsicles are a summertime tradition. I've fond memories of chasing the ice cream truck at the summers so that I could purchase an orange creamsicle. Taste and the sweetness of an orange popsicle combined with vanilla ice cream's coolness is next to none. There's nothing better! Well there used to be! This Low Carb Orange Creamcicle cake that is wonderful is equally refreshing and yummy without the guilt, although as the favorite summer cure!

INGREDIENTS

  • 3 Eggs
  • 1 tsp Vanilla
  • 1 tablespoon Olive oil
  • 1 teaspoon Orange zest
  • 1/4 tsp Nutmeg
  • 1 tablespoon Baking powder
  • 2-3 drops food coloring

INSTRUCTIONS

  • Preheat oven to 350 degrees; grease a pan or two little pans.
  • Blend in 1 egg at a time.
  • Mix in milk, orange zest, nutmeg.

NOTES

  • If utilizing two pans, then takes approximately 30-35 mins from the oven
  • When having a pan or a pan, requires about 40-45 mins from the oven
