Keto Hummingbird Cake – Low Carb & Gluten Free
This decadent Keto Hummingbird Cake includes of the signature tastes of this favored that is Southern -- and no one will think it is gluten free and low carb!
The very first time was a year or two back when we lived in Belize. I had heard of it but not tried it, and I was hooked once I did! Why was nobody -- overlook red velvet cake and carrot cake -- I could not believe people did not understand about this cake
I utilized my Keto Cream Cheese Frosting with this particular Keto Hummingbird Cake, also it turned out to be a sublime combination. The cream cheese paired together with a sign of pineapple along with all the spiced cake using a banana taste is much layer cake perfection.
DESCRIPTION
THIS DECADENT KETO HUMMINGBIRD CAKE HAS All of the TRADEMARK FLAVORS OF THE CLASSIC SOUTHERN FAVORITE- AND NOBODY WILL BELIEVE IT GLUTEN AND CARB FREE!
INGREDIENTS
- 1/2 cup brown sugar (I used Lakanto)
- 6 large eggs
- 3 cups superfine blanched almond milk (I used Wellbees)
- 1 cup coconut milk
Pinch of salt
- 4 tsp baking powder
- 1/2 tsp xanthan gum
- 1 tsp vanilla extract
- 2 tsp banana extract
- 2 cups unsweetened, milk
INSTRUCTIONS
- Grease 2 9-inch cake pans, and line the bottoms with parchment paper (cut around to match ) that will ensure the final cake will not adhere to the bottom.
- Add vanilla extract milk milk, salt, cinnamon, allspice, baking powder, xanthan gum, the beans, banana extract, and milk.
- Stir in the pineapple, 1/2 cup shredded coconut, and also 1/2 cup chopped pecans.
- Divide the batter (that is thick) between the two cake pans, and spread evenly using a silicone spatula.
- Remove and cool for half an hour on a wire rack.
- Remove and put aside to garnish.
- Run a knife around the rim to discharge the cake, then turn out onto a cake plate or base.
- Put about 1/3 of this cream cheese and spread to the borders with a knife.
- Place cake upside down on the coating that is frosting.
- Press toasted coconut evenly into the faces of the cake together with your palms, and blow off or wipe any coconut when completed.
- Can be served immediately, but I think that it's better after frightening for at least 2 hours or even overnight.
