Ingredients:
- Frosting
- 2 tsp. vanilla extract
Cake
- 1 3/4 cups moist-style confetti cake mix (roughly half a box)
- 1/2 cup fat-free plain Greek yogurt.
Topping
1 tablespoon. rainbow sprinkles
Instructions:
- Line a 12-cup muffin pan with baking cups, or spray it.
- To make the frosting, combine butter, cream cheese and vanilla extract in a large bowl. Continue to beat while adding sugar. Beat until smooth, yet another 1 - 2 minutes.
- In a second bowlcombine yogurt, cake mix, and also 3/4 cup water. Whisk until uniform and smooth. Distribute batter.
- Bake until a toothpick inserted into the middle of a cupcake comes out clean, 16 - 18 minutes.
- Let cool about 10 minutes from the pan and 25 minutes from the pan.
