CARROT CAKE WITH ORANGE CREAM CHEESE FROSTING

Ingredients
- 2 cups flour
- 1/2 tsp salt
- 3 eggs
- 3/4 cup buttermilk
- 2 cups sugar
- 20 ounce can crushed pineapple
- 3 1/2 cups carrots
- 1 teaspoon orange peel, grated
For your Buttermilk Glaze
- 1/2 cup sugar
- 1/4 cup buttermilk
- 1/4 cup butter
- For your Orange Cream Cheese Frosting
- Cream cheese, softened
- 1 teaspoon vanilla extract
- 2 tsp fresh juice
Directions
- In a medium mixing bowlwhisk together flour, baking soda, salt and cinnamon.
- In a large bowl, mixed sugar, oil, buttermilk, eggs and vanilla. Conquer low-speed until blended.
- Stir with a wooden spoon in flour mixture.
- Fold in lemon coconut, and carrots .
- Pour into prepared cake pans and bake for 30-35 minutes or until tooth pick comes out clean.
- Remove from oven and poke holes all over the cake.
- Pour the buttermilk glaze the two cakes over.
- Eliminate and let cool completely.
- For your Buttermilk Glaze
- Cook for 5 minutes, stirring frequently.
- Add vanilla. Stir until blended.
- For your Orange Cream Cheese Frosting
- Beat butter and cream cheese until fluffy and light.
- Add lemon juice sugar, grated orange peel, and vanilla.
- Frost chilled.
