Blueberry muffins swirled with blueberry jam, topped with the streusel, and served fresh from the oven, using a drizzle of butter. Fantastic for all the delicious spring and summer berries coming into year!





However, these swirl coffee cake muffins? I believe that they might be better. That's the reason and I am quite eager to talk about them! I won't say since nothing is perfect, they are perfect. And who knows I might produce something. However, as of now, these muffins are pretty close to ideal, so yummy.

Simply mix the batter up...using staples such as butter, eggs and yogurt (your normal muffin mix). Then mix your streusel, and include fresh blueberries (frozen function too)! Nothing elaborate classic, but with an updated twist which makes these better. And much better than Betty Crocker's box muffins I would make as a child. Did anyone else live from these? I recall a point once I was in 5th grade or 4th? I would mix those up store-bought blueberry muffins after college my mother would purchase them. I loved these!

INGREDIENTS

STREUSEL

  • 3/4 cup flour
  • 2 tsp cinnamon
  • 6 tablespoons cold butter, grated or cubed

MUFFINS

  • 2 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 1/2 cups frozen or fresh blueberries
  • 1/3 cup top Excellent blueberry jam

INSTRUCTIONS
  • To make the streusel: In a small bowl, then add brown sugar, the flour, cinnamon, and butter. Mix together with your hands till you've got a mix. Put aside.
  • . Add salt, baking powder, baking soda, cinnamon, and the flour, blend until blended. Gently fold being careful not to over blend. Bear in mind, you're opting to get a swirl look.
  • . Divide the batter. Serve hot or at room temperature.
